According to Marriott International Vice President of Culinary, Global Operations, Stephen Toevs, hotel restaurants are embracing new trends to enhance guest experiences and meet the changing demands of travelers. From multisensory dining to social media-driven menus, here are the top trends that will shape the future of hotel dining.

Experiences Turn Multisensory

Dining experiences in 2025 will go beyond taste to engage all the senses. Travelers are increasingly looking for emotional connections that transport them to specific moods or destinations. High-end hotel restaurants are incorporating tailored soundscapes, curated scents, and evolving ambient lighting to create unforgettable dining moments.

“High-end venues are embracing multisensory design, making each visit feel bespoke and personalized,” Toevs explained in an interview with Hotel Dive. This trend builds on the success of multisensory wellness offerings introduced by brands like Marriott and IHG Hotels & Resorts in 2024, now extending into culinary spaces.

Food and Beverage Connect Generations

As multigenerational travel becomes more popular, hotel restaurants are creating experiences that appeal to guests of all ages. A key driver of this trend is “newstalgia,” which combines modern twists with classic comfort foods. By reimagining traditional dishes with contemporary ingredients and presentation, chefs are creating dining experiences that bring families together.

An example of this is “tipsy tea,” a modern take on traditional high tea, featuring boozy drinks and a live DJ. This unique concept has been successfully implemented at The Gwen, a Luxury Collection Hotel in Chicago. Similarly, the Old Hickory Steakhouse at Gaylord Rockies Resort is reinventing the classic baked potato with luxurious ingredients like caviar, pork belly lardon, and black truffle.

“When chefs create twists on classic dishes, the meal or experience becomes a talking point among generations, bonding families and creating memories,” Toevs said.

Social Media Influences Menus

In the age of Instagram and TikTok, social media is shaping the way hotel menus are created and promoted. Chefs are drawing inspiration from viral food trends and creating shareable menu items to increase their property’s visibility online. According to Toevs, chefs are also using their personal social media presence to build their brand and attract guests to their restaurants.

“Chefs are an extension of our [hotel] brands,” Toevs noted. “They can post to their social media and their followers will see and [think], ‘Oh, wow. Chef Stephen is working at this hotel, and he’s doing some pretty amazing things. That looks really delicious. I need to go get a cocktail there and have that particular crispy chicken sandwich at the bar.’”

At the same time, creating unique and immersive dining experiences encourages guests to capture and share their moments online. Concepts like “tipsy tea” have already gained popularity as highly shareable experiences on social media platforms.
